Salads In A Jar


3 Salads in a Jar ~ Mediterranean Salad, Kale Salad, and Lentil Arugula Salad

Mediterranean Salad

1 cup romaine lettuce, chopped
¼ cup garbanzo beans
¼ cup artichokes, halved
¼ cup olives, pitted and halved
¼ cup roasted tomatoes, diced
2-3 tbsp Curry House dressing

Layer in jar dressing first, then Mediterranean ingredients, and top with lettuce.



Kale Salad

1 cup kale, slivered or chopped
½ cup quinoa, cooked
¼ cup pumpkin and sunflower seeds, toasted
¼ cup red onions sliced or diced
2-3 tbsp Sweet Balsamic Dressing

For Dressing:

Whisk together: 1/4 C balsamic vinegar, 1/4C olive oil and 1/2 tsp Celtic Sea Salt

Layer dressing in jar first, then quinoa, then seeds and onions, and top with kale.



Lentil and Arugula Salad

1 cup arugula,
¾ cup lentil tabbouleh
¼ cup cherry tomatoes, diced
2-3 tbsp sweet Masala dressing

Sweet Masala Vinaigrette

1 orange, juiced ¼ C
1Tbl. raw honey
¼ – ½ tsp. Garam Masala
2-3 Tbl Olive oil
Pinch of Celtic Sea Salt
Fresh ground pepper to taste

In a small pot add orange juice, honey and Garam Masala. Bring to a boil.
Whisk occasionally. Let simmer until reduced by half.Remove from stove.
Pour reduced orange juice in a small bowl and whisk in olive oil. Taste before adding salt.
Add salt if needed. Add fresh ground pepper to taste.
Layer in jar dressing first, then lentil tabbouleh with tomatoes, and top with arugula.
