Cauliflower Leeks and Capers

Bonus, cauliflower is low in calories. Its great to eat raw, roasted or seared with leeks and capers. Cauliflower is a complete powerhouse food. Fresh picked cauliflower
Look for other colorful varieties! Pictured is Romanesco or Broccoflower, purple and orange varieties. Its fun to use other colors.

Cauliflower Leeks and Capers

Ingredients

Units Scale
  • 1 lb. Green Cauliflower florets
  • 1/2 cup red onion
  • 12 clove garlic minced
  • 2 tsp. capers
  • 1 tsp. sweet paprika
  • Olive oil
  • Celtic Sea Salt

Instructions

  1. In a pre-heated large skillet on medium heat add olive oil and red onion. Cook covered for 1 minute.
  2. Add cauliflower florets. Cover and sear for 3 minutes. Stir and cook covered for 3 more minutes. 
  3. Uncover and add capers, paprika and a pinch of salt. 
  4. Cook uncovered for another 1-2 minutes.
