A fun twist on S’mores

    Ingredients

    Units Scale
    • 1/3 cup brown sugar, packed
    • 1/3 cup coconut sugar
    • 3/4 cup Hazelnut Chocolate almond butter ( like Nutella only better for you
    • 1 egg
    • 1 tsp. Vanilla extract
    • 1/2 tsp. Baking soda
    • 1 tsp. corn starch, organic
    • 1/2 tsp. Sea salt
    • 3/4 cup GF flour(Pegs used Pamela’s baking flour blend)
    • 1/23/4 cup min marshmallows, cut in half
    • 3/4 cup dark chocolate morsels or chunks (Enjoy Life)
    • 1/23/4 GF graham crackers, chopped (Pamela’s GF Graham crackers or Simple Mills grain free Honey graham style cookies)
    • 23 Tbsp. Nut milk (Pegs used hazelnut milk)

    Instructions

    1. Blend until creamy: Sugars and nut butter
    2. Add the egg and vanilla
    3. In a bowl mix together all dry ingredients: flour, baking soda, salt, and corn starch.
    4. Add dry ingredients to wet ingredients and mix together until blended
    5. Add 2 Tbsp. of nut milk and 1 more if dough is too dry and crumbly
    6. Stir in marshmallows, chocolate chips and chopped graham crackers.
    7. Dough should feel moist not crumbly or dry
    8. Roll 1-2” balls onto a parchment lined baking sheet.
    9. Place 1 piece graham cracker, a halved mini marshmallow and a chocolate chip on top.
    10. Cover and place in fridge for 25 min exactly.
    11. Pre-heat oven to 350-degrees
    12. Remove cookies from fridge. Press a finger into the center and place a halves marshmallow, a graham cracker piece and a chocolate piece in the center
    13. Place chilled cookies into the hot oven and bake 8 minutes exactly. Cookies will be underdone, but this makes for chewy gooey cookies! Let cookies cool completely so they set up!
    14. Remove and let cool completely.
    15. Enjoy these Soft chewy and Fudgy cookies!
