What’s better than a fresh batch of cookies? Not much. Today I’m going to share our recipe for gluten-free dairy-free double chocolate chip cookies, which might just be the world’s simplest and most delicious cookie! What makes these cookies so great is not only their recipe but also their simplicity. They only have four ingredients, so nothing crazy at all.

I love chocolate. I love cookies. I love chocolate chip cookies. But I’m not a fan of the cakey kind. I like my cookies crispy and chewy, with lots of chocolate chips. That’s why double chocolate chip cookies are my favorite—they have even more chips, but they keep their cookie texture, too. This recipe is one that we’ve tried several times, and it’s always been a hit with family and friends!

I’ve been experimenting with recipes for double chocolate chip cookies for a while now. I’ve tried numerous variations and have come up with a recipe I’m so excited to share with you!

These cookies are gluten free, dairy free, and soooooo good!

 

Just like the gluten free chocolate chip cookies, I had a lot of fun testing this recipe. I wanted to make sure that these double chocolate chip cookies were soft and chewy, just like your favorite cookies you remember growing up!

I also wanted to make sure that they were sweet enough, but not too sweet. They needed to be free from the gritty texture that sometimes plagues gluten free baked goods.

The best part about these cookies is they taste good! I mean, really, really good! They’re moist but firm and won’t crumble in your hand. The chocolate chips are creamy but still have that satisfying crunch when you bite into them.

So enough of me rambling on and on about how great they taste…make them for yourself and see what all the fuss is about!

These gluten free double chocolate chip cookies are the best ever! They are so easy to make and only require 4 INGREDIENTS. They’re also naturally gluten free, grain free, dairy free, oil free, and refined sugar-free.  Sign us up!

They are super soft and chewy and such a simple treat to make. Kids love them! And I just love a good cookie recipe that is made with more healthy ingredients.

☆ This recipe is SO easy to make and only requires 4 INGREDIENTS:

– 1 bag Pamela’s Brownie Mix

– 1 large egg

– 1/2 Cup melted coconut oil, or olive oil

– 2 Tbsp nut milk, I used almond milk

Optional: 1/4 cup chocolate chips (but not sure why you wouldn’t include 😉 more chocolate the merrier!!)

Another fun addition to these cookies: add 1/4 cup of Pamela’s gluten free graham crackers crumbles and mini marshmallows to make these gluten free S’Mores Cookies! Wow! Yes, we just suggested that. And just in time for summer BBQs.

Gluten Free Double Chocolate Chip Cookies

Ingredients

1 package Pamela’s gluten free brownie mix

1 large egg

2 Tbsp almond milk, or milk of choice

1/2 cup coconut oil, melted

1/4 cup mini chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Put all ingredients into a medium sized bowl and mix together.
  3. Line baking sheet with parchment paper.
  4. Take a heaping spoonful of cookie dough, around 2 tablespoons, and form into a cookie shape. Slightly pressing down to flatten. They do not spread that much, so you can fill the cookie sheet. We fit 12 cookies onto the pan
  5. Bake for 8-10 minutes until your desired doneness.
  6. Enjoy!
