Lentil Tabbouleh Salad
Serves 2
Ingredients:
1 cup lentils, cooked (we used French green lentils ~ canned lentils, rinsed, work well too!)
1/2 cup tomato, diced
1/2 cup cucumber, diced (we used Persian cucumbers)
1/4 cup green onion, diced (use white and green parts)
Handful fresh parsley leaves, minced
3-4 Tbsp. olive oil
Juice of lemon (about 1/4 C)
Pinch of Celtic sea salt
Method:
Mix ingredients together and enjoy. Gets better as it marinates. Store in refrigerator until ready to serve.
