2 Tbl. water
2-3 Sheet Matzo
Ghee, coconut oil, or butter
Salt and pepper to taste
Jam, nut butter or maple syrup
In a medium skillet heat ghee on medium high heat.
While heating the skillet, scramble the eggs and 2 Tbl water, salt and pepper to taste.
In a bowl, break up matzo into medium pieces and cover with water. IMMEDIATELY drain the water. Do not let soak, or the matzo will disintegrate.
Add egg to wet matzo, stir and immediately pour into your heated skillet. It WILL sizzle. Do not cover.
To know if your pan is hot enough, the oil will begin to pull away from the middle of the skillet. You can also drop a bit of egg to see if it sizzles. Pan needs to be hot so the matzo brei will brown and crisp nicely.
Pour matzo egg mixture into the hot skillet.
Let cook for 2-3 minutes. Check to see if browned and them using a large flipper, turn and cook another 2-3 minutes. Should be browned on both sides.
Serve with maple syrup, butter, jam and or almond butter!
