No Bake Coconut Squares with Chocolate Drizzle
Recently Meg’s and I went to Expo West the natural food trade show in Southern California. There were many new products, actually thousands of new products, however when we found Edward and Son’s Let’s Do Organic sweetened condensed milk, we just about fell over! To say that we are cocoNUTS is putting it mildly. We love this new product! At their booth they were serving coconut mini bites. Thankfully they were kind enough to share this oh so simple 2 ingredient NO BAKE easy as pie to make recipe! We added the chocolate, because who doesn’t love chocolate and coconut? Literally these are mounds of feel goodness in each bite.
Ingredients:
1 Can sweetened condensed coconut milk
1 Bag coconut shreds, unsweetened
1 8×8 glass baking dish
Chocolate Chips, bittersweet or semi sweet for melting

Method:
Melt the sweetened condensed coconut milk in a medium pot on low heat.
Add the bag of coconut shreds to the pot and stir until well mixed.
Pour the coconut mixture into your glass baker. Press it down using a spatula or your hands.
Drizzle with melted chocolate.
If making them into balls, dip the balls into the chocolate and place on a parchment lined cookie sheet or tray and place in freezer for 10 minutes. Remove and store covered in the refrigerator up to 2 weeks.
Method for melting chocolate chips:
In a double boiler or a smaller pot over a medium pot filled 1/3 full with water.
Bring water to a simmer and add chocolate chips into a smaller pot that sits over the larger pot with water.
As the water simmers the chocolate will melt. Stir and remove from heat and let sit until ready to drizzle or dip the balls into.
