1 small red onion , diced
1/2 red pepper , diced
1/2 yellow pepper , diced
2 juicy tomatoes, diced
1-2 cloves garlic, minced fine
1 peach, diced
1 avocado , diced
2 chipotle peppers or to taste…, diced
1/4 – 1/2 C cilantro, minced
1 lime, juiced
Salt to taste
1/4 C Black-eyed peas or black beans, drained (optional)
Dice all ingredients and mix together!
Serve with your favorite chips!
