I’d be remiss not to include a little information as to why we choose non-GMO corn or other produce or manufactured products as a healthier choice.

Ingredients

Units Scale
  • 1 ears of fresh corn, shucked and kernels removed
  • 1 cup heirloom cherry or grape tomatoes, halved
  • 2 Tbsp. fresh red onion with chive green tops, finely diced
  • 1/4 cup red, purple or orange bell pepper, finely diced
  • 12 tsp. serrano chili pepper, finely diced
  • Juice of 1/2 lime
  • 2 Tbsp fresh cilantro, rough chopped or fresh herbs of choice (basil, parsley, or dill)
  • 1/4 cup Cilantro Lime Vinaigrette (an adapted version from Damn Good Gluten Free cookbook recipe follows)
  • Sea Salt and fresh ground pepper to taste
  • Garnish with fresh cilantro flowers or minced fresh cilantro

Instructions

  1. Preparation: In a large bowl, combine the corn kernels, heirloom cherry tomatoes, red onion and green onion tops, serrano chili, purple bell pepper, cilantro and lime.
  2. To Make the Dressing: In a small bowl, whisk together 1/4 cup avocado oil, 1/4 cup fresh lime juice, 1/4 cup rough chopped cilantro, 1 garlic clove, 2 Tbsp. shallot or red onion and 1/2 tsp. sea salt. I used a magic Bullet to blend all the ingredients. Use a whisk or a mini food processor to thoroughly combine and blend all the ingredients. 
  3. Combining: Pour a little at a time to dress the corn and tomato mixture, tossing gently to coat. If making a salad, you’ll add more dressing to the salad greens.
  4. Herb flowers: Add the fresh herb flowers to garnish.
  5. Chill: You can either chill the salad in the refrigerator for at least an hour before serving. This will allow the flavors to meld together. Or serve it as is. Keeps for a couple days refrigerated in an airtight container. 
  6. Serve: Serve this refreshing corn and tomato salad as a side dish with fajitas, tacos, grilled meats or seafood, or as a standalone dish for a light and satisfying meal served over a bed of lettuce.
