Refreshing Corn Tomato Salad: A Summery Delight

Summer’s here, and it’s the perfect time to embrace fresh ingredients such as our Refreshing Corn and Tomato Salad. Truly a summery delightful dish that sings with flavor. Our newest salad is perfect for this season.  This salad celebrates the essence of summer with the sweet crunch of corn and the juicy tang of tomatoes. Here’s an exploration of this culinary delight, featuring a corn salad recipe that’s sure to become a favorite side dish in your summer and into fall menus.

Fresh Sweet Corn: The Star Ingredient

Sweet corn is the embodiment of summer flavor. Whether grilled, boiled, or fresh off the cob, corn kernels burst with a sweetness that’s incomparable. The freshness of corn is crucial for this corn and tomato salad, as it lends a natural sweetness and crunch that pairs perfectly with the softness of the tomatoes. I also find its easier to digest than canned or frozen corn. I was often curious why this is as I don’t always do well with corn products, but fresh in season, totally works in my body! Seriously, I loved this article about corn and how we digest it and why its actually good for us in its whole form!

Why choose a Non-GMO corn?

I’d be remiss not to include a little information as to why we choose non-GMO corn or other produce or manufactured products as a healthier choice.

However, we believe for our health, it’s essential to make mindful choices when selecting produce. Here’s why:

Genetically Modified Organisms (GMOs) are often used in conventional agriculture to increase yield and resistance to pests. However, there are ongoing debates and concerns about the potential health and environmental impacts of GMO crops.

Choosing non-GMO corn ensures that you are consuming corn that has been grown without genetic modification, aligning with a more natural and holistic approach to eating. Many people prefer non-GMO options as a way to support sustainable farming practices and to avoid potential unknown health risks associated with GMOs.

Organic Corn: A Step Further

Going a step further why choosing organic corn can make your refreshing corn tomato salad even more wholesome. Organic corn is not only non-GMO but also grown without synthetic pesticides, herbicides, and fertilizers. It’s a choice that supports environmental health, promotes soil fertility, and often results in a more flavorful and nutritious product.

When you opt for organic corn or organically grown produce, you’re investing in the health of the soil, the well-being of the farmers, the sustainability of the ecosystem, and, of course, your own wellness. If available and within your budget, organic corn can elevate the quality and integrity of your dish and the well being of our bodies and planet.

Heirloom Tomatoes: A Juicy Counterpart

Grape or cherry heirloom tomatoes are a fantastic choice for this salad. Their firm texture and concentrated flavor balance the sweetness of the corn. Feel free to experiment with different varieties of tomatoes to find your favorite combination. Learn more about the many healthful benefits antioxidant rich tomatoes give to our bodies.

Fresh Herbs: Elevating the Flavor

Fresh herbs, such as basil, cilantro, or parsley, can add an aromatic touch that elevates an entire dish. Their earthy fragrance complements the sweetness of the corn and the acidity of the tomatoes, try using the flavors that you like best or use the fresh cilantro leaves and flowers we used. We are huge fans of cilantro’s healing and detoxifying properties.  But not everyone is. For some they find it to taste soapy, which is a genetic reaction from the herb.

Units Scale
  • 1 ears of fresh corn, shucked and kernels removed
  • 1 cup heirloom cherry or grape tomatoes, halved
  • 2 Tbsp. fresh red onion with chive green tops, finely diced
  • 1/4 cup red, purple or orange bell pepper, finely diced
  • 12 tsp. serrano chili pepper, finely diced
  • Juice of 1/2 lime
  • 2 Tbsp fresh cilantro, rough chopped or fresh herbs of choice (basil, parsley, or dill)
  • 1/4 cup Cilantro Lime Vinaigrette (an adapted version from Damn Good Gluten Free cookbook recipe follows)
  • Sea Salt and fresh ground pepper to taste
  • Garnish with fresh cilantro flowers or minced fresh cilantro

  1. Preparation: In a large bowl, combine the corn kernels, heirloom cherry tomatoes, red onion and green onion tops, serrano chili, purple bell pepper, cilantro and lime.
  2. To Make the Dressing: In a small bowl, whisk together 1/4 cup avocado oil, 1/4 cup fresh lime juice, 1/4 cup rough chopped cilantro, 1 garlic clove, 2 Tbsp. shallot or red onion and 1/2 tsp. sea salt. I used a magic Bullet to blend all the ingredients. Use a whisk or a mini food processor to thoroughly combine and blend all the ingredients.
  3. Combining: Pour a little at a time to dress the corn and tomato mixture, tossing gently to coat. If making a salad, you’ll add more dressing to the salad greens.
  4. Herb flowers: Add the fresh herb flowers to garnish.
  5. Chill: You can either chill the salad in the refrigerator for at least an hour before serving. This will allow the flavors to meld together. Or serve it as is. Keeps for a couple days refrigerated in an airtight container.
  6. Serve: Serve this refreshing corn and tomato salad as a side dish with fajitas, tacos, grilled meats or seafood, or as a standalone dish for a light and satisfying meal served over a bed of lettuce.
