Thistle Lemonade

Last night’s CLEAN class got a big treat straight from our Steamboat garden! It’s something that We’ve been reckoning with for the past 3 years to get rid of, THISTLE. We have a different name for it, as when you get pricked by it’s nasty little thorns it makes you scream out loud. So when my dear friend and fellow gardener Grace and I discovered the benefit from juicing thistle we were ecstatic by its delicious taste and extreme benefit!  We found out that thistle is great for our liver. So in our second Clean cooking class we served up a sample to all of our students.  Needless to say we all loved it and have a new found respect for this nasty weed! WHO KNEW the great medicinal benefit THISTLE has, and then to drink it as a delicious lemonade, WOW! Our cells AND  our liver are so happy! Here are some of thistle’s potential benefits and Grace’s recipe with photos.

Milk thistle seed is an extremely beneficial and healing herb for the liver.  These are a few of the possible health benefits of milk thistle seed related to the liver:

*Helps to support the liver’s ability to regenerate damaged tissue
*Reduces inflammation of the liver and gallbladder
*Improves digestion by stimulating bile production
*Helps to detoxify the liver from poisons like pollution and alcohol
*Provides the body with antioxidants

Ingredients:
  • 6-8 Thistle leaves (use gloves when gathering Thistle, clip leaves from stem, grab from the back (spine of the leaf) put leaves in blender)
  • 1 lemon, cut skin off leaving a little zest on the lemon for more flavor
  • 4 1/2 – 5 cups purified water
  • 1/3 – 1/2 cup raw honey (depending on how sweet you like it)
Method:

  1. Whirl all ingredients in a blender.
  2. Using a strainer, strain the juice.

Drink up! Great to start your day with this mineral revitalizing, ph balancing and liver healing drink.  Can take the place of your hot water and lemon as your liver purifier. Best to consume same day to achieve maximum benefit.
