Two Quinoa Salad Recipes with Simply Quinoa! We had the pleasure of filming recipe videos with our friend Alyssa of Simply Quinoa. Alyssa creates deliciously healthy (primarily plant-based) recipes, a lot of which contain the nutritional powerhouse quinoa!

This two-for one recipe video includes a new recipe from yours truly plus one of Alyssa’s faves! They are both perfect meal-prepped salads that are great to take with you to work, school, or leave in your fridge for when hunger strikes!

Here’s how to layer:

  • Layer 1: dressing
  • Layer 2: beans/protein
  • Layer 3: chopped veggies
  • Layer 4: grains/nuts/seeds
  • Layer 5: greens

Our salad recipe was inspired by our Aunt Kathy Curry’s citrus ginger dressing. While she was visiting in January, we cooked live on our Instagram and made a delicious Coconut Green Curry with Shrimp and Chicken (recipe coming soon!). For dinner afterwards, we paired it with Coconut Rice and a mixed greens salad with this delicious dressing!

Using the leftover dressing, Megs put together this delicious roasted veggie salad and loved it so much ~ we had to share it with you!

Roasted Veggie & Citrus Ginger Mason Jar Salad

*Recipe makes 2 mason jar salads

Ingredients For The Salad

  • 1 cup roasted butternut squash, cubed
  • 1 cup chopped hearts of palm
  • 1 cup cooked quinoa
  • ½ cup sprouts
  • ¼ cup pumpkin seeds and sunflower seeds
  • 3 – 4 cups mixed greens

Ingredients For The Dressing

  • 1” ginger, peeled and minced or grated
  • ½ C orange juice
  • ¼ C lemon juice + zest (Note: zest first try not to get the pith then juice)
  • ¾ Cup Avocado oil. (OR ¼ C lemon oil + ½ C avocado oil would be nice)
  • 2 Tbsp. Fresh finely minced yellow onion
  • 1 tsp. local raw sage honey
  • 1 pinch Malden Salt (about ½ tsp. to taste)
  • Fresh ground pepper to taste

*Note: this will make a full batch of dressing, you only need 4 tablespoons or so per-jar in this recipe

Method

Begin with the dressing. Whisk all ingredients together in a small bowl. Taste and adjust seasoning if desired. Only use 4 tablespoons for this recipe. Save remaining in a container in the refrigerator.

When ready to assemble the salads, evenly divide the dressing between 2 wide-mouth mason jars (quart size). Then evenly divide the remaining ingredients and add to the mason jars in the order listed. Seal with lid and store in the refrigerator until ready to eat.

When serving, pour contents of the mason jar into a bowl. Stir around to help get dressing distributed and enjoy!

Alyssa’s Mediterranean-esq Quinoa and Tahini Mason Jar Salad

Simply Quinoa’s Chickpea & Quinoa Mason Jar Salad

Ingredients For The Salad

  • 1 cup canned chickpeas
  • 1 cup chopped cucumbers
  • 1 cup cherry tomatoes
  • 1 cup cooked quinoa
  • 1/2 cup chopped green onions
  • 3 – 4 cup chopped romaine lettuce

Ingredients For The Dressing

  • 2 tablespoon Tahini
  • Juice of 1 lemon (we love Meyer Lemons)
  • 1 -2 teaspoons water
  • Pinch of salt

Method

Begin with the dressing. Whisk all ingredients together in a small bowl. Taste and adjust seasoning if desired.

When ready to assemble the salads, evenly divide the dressing between 2 wide-mouth mason jars (quart size). Then evenly divide the remaining ingredients and add to the mason jars in the order listed. Seal with lid and store in the refrigerator until ready to eat.

When serving, pour contents of the mason jar into a bowl. Stir around to help get dressing distributed and enjoy!
