  • 23 Handfuls of arugula

  • 1/2 purple radish, sliced into half moons

  • 1 Tbsp. Imperfect Foods 100% California Organic Virgin Olive oil, for sweet potatoes

Instructions

Method

  1. Pre-heat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Coat pre-cubed sweet potatoes in olive oil. Place on baking sheet and bake for 10-15 minutes.
  3. Toss arugula and salad dressing in a bowl.
  4. Transfer to a serving bowl and top with remaining ingredients.
