- 2–3 Handfuls of arugula
- 1/2 purple radish, sliced into half moons
- 1/4 – 1/2 cup of Mininger Foods pre-cubed sweet potatoes, roasted
- 2 Tbsp. Fiscalini Farmstead San Joaquin Gold cheese, thick slices or shreds
- 1–2 Tbsp. Life’s Grape vine-ripened grapes
- 2 Tbsp. Curry House dressing (using Imperfect Foods 100% California Organic Virgin Olive oil)
- 1 Tbsp. Imperfect Foods 100% California Organic Virgin Olive oil, for sweet potatoes
Instructions
Method
- Pre-heat oven to 400 degrees F. Line a baking sheet with parchment paper.
- Coat pre-cubed sweet potatoes in olive oil. Place on baking sheet and bake for 10-15 minutes.
- Toss arugula and salad dressing in a bowl.
- Transfer to a serving bowl and top with remaining ingredients.
