Nourishing Green Bone Broth

Ingredients

  • 12 chicken carcasses~bones from roasted chicken (or 23 lbs roasted beef bones or a combination)
  • 3 carrots. 2 stalks of celery, and 1 whole onion, coarsely chopped
  • 23 cloves whole fresh garlic
  • 1 bunch fresh parsley
  • 1 bay leaf
  • 8 whole peppercorns
  • 1 package prepared organic chicken or beef stock enough water to just cover the bones and veggies and enough water to just cover the bones and veggies
  • 1 tbsp apple cider vinegar (optional) the vinegar imparts no flavor but helps pull the nutrients out of the bones
  • 1 tsp Celtic sea salt
  • 4 Shiitake mushrooms (optional)
  • Lemongrass (optional)
  • 1 handful dandelion greens
  • 1 handful spinach
  • 1 handful parsley
  • 1 handful cilantro
  • 1 1 inch piece ginger, grated

Instructions

  1. Add bones, carrots, celery, onion, garlic, bunch of parsley, bay leaf, salt, peppercorns and optional mushrooms and lemongrass to a large pot.
  2. Add apple cider vinegar if using and just enough liquid to cover bones and veggies. Bring to a boil.
  3. Reduce to a simmer for 1-2 hours (or about 4 if using beef bones). Uncover and cook for an additional 15 minutes.
  4. Strain and allow to cool. If a layer of fat has developed on the top, remove with a spoon and discard. Toss all ingredients except carrots, celery, and onions if making broth into soup.
  5. Now that your base bone broth is ready, add the handfuls of greens, cilantro, parsley and grated ginger to your broth and bring to a boil.
  6. Allow to cool slightly before putting in blender. Blend until you achieve a smooth consistency.

We cook this recipe for 1-2 hours (or 3 to 4 if using beef bones) but the longer it simmers, the more savory, nutrient-rich, and concentrated the broth will be, so feel free to cook longer (up to 24 hours)
