Delicious and nutritious ~ Love at first bite!

Ingredients

(GF, DF V options)

Ingredients: 

1 C (2 sticks) unsalted butter OR Earth Balance, coconut oil, or nut butter

1 C Brown sugar or coconut sugar or a combo of each

2 eggs OR 3 TBL Chia seeds soaked in 1/3 C water for 3 minutes

2 tsp vanilla extract

1 C Flour of choice: Pamela’s Baking or Pamela’s Artisan Flour blend

1 1/2 C Bob’s Red Mill Rolled Oats (not quick)

1/2 C Coconut flour

1/4 C fresh ground flax seeds

1 tsp baking powder

Added goodness:

1/4 C Each: hemp, sunflower and pumpkin seeds~ Choose a combo or all 3

1/2 C Each; chopped pecans, macadamia nuts, and or walnuts

1 C chocolate chips. We love Enjoy Life Chocolate chunks

1 C coconut flakes

Instructions

Preheat oven to 350 degrees.

In a small bowl cream butter and sugar. Melt butter for a crispier texture*

Add eggs and vanilla.

Next mix in the flours, ground flax and baking powder until smooth.

Then stir in all the nuts, seeds, chocolate chips. Batter is very thick.

Roll cookie batter into small balls and flatten them on a parchment lined cookie sheet. Bake in a preheated 350 degrees for 12-14 minutes or until golden brown.  Makes about 4 dozen  delicious cookies.

Alternative Hippy Cookie: Omit chocolate and add 1-2 tsp cinnamon and

1 Cup raisins or other dried fruit~ cranberries, blueberries or cherries.

Notes

Note: Using melted butter the cookie will spread out when baked. Otherwise the cookie will stay chunkier and not spread on pan.
