Hearty Vegetable + Wild Rice Soup

Ingredients

  • 1 small onion diced
  • 1 leek (white part only), thinly sliced
  • 1 heaping cup shiitake mushrooms, diced (about 4 medium ones)
  • 24 cloves fresh minced garlic
  • 1 stalk celery, diced
  • 24 carrots, diced
  • 2 Tbsp. coconut oil
  • 1 1/2 tsp. Italian herb blend
  • 1 tsp. Celtic sea salt
  • 4 cups homemade or Imagine’s No-Chicken broth
  • 1 cup wild rice, rinsed and cooked
  • 1 cup green beans, chopped
  • 12 zucchini, diced or half-mooned
  • 1/2 tsp. fresh ground pepper

Instructions

  1. Sauté the onions, leek, mushrooms, garlic, celery,
    and carrots in coconut oil until soft.
  2. Add Italian seasonings and salt. Stir until heated
    and fragrant.
  3. Add broth. Cook for 15 minutes or until veggies
    are tender.
  4. Add cooked and drained wild rice, green beans
    and zucchini.
  5. Cook for 15 minutes, until tender and still
    vibrant in color. Adjust seasonings to taste. Finish
    with fresh ground pepper.
