- 1 small onion diced
- 1 leek (white part only), thinly sliced
- 1 heaping cup shiitake mushrooms, diced (about 4 medium ones)
- 2–4 cloves fresh minced garlic
- 1 stalk celery, diced
- 2–4 carrots, diced
- 2 Tbsp. coconut oil
- 1 1/2 tsp. Italian herb blend
- 1 tsp. Celtic sea salt
- 4 cups homemade or Imagine’s No-Chicken broth
- 1 cup wild rice, rinsed and cooked
- 1 cup green beans, chopped
- 1–2 zucchini, diced or half-mooned
- 1/2 tsp. fresh ground pepper
Instructions
- Sauté the onions, leek, mushrooms, garlic, celery,
and carrots in coconut oil until soft. - Add Italian seasonings and salt. Stir until heated
and fragrant. - Add broth. Cook for 15 minutes or until veggies
are tender. - Add cooked and drained wild rice, green beans
and zucchini. - Cook for 15 minutes, until tender and still
vibrant in color. Adjust seasonings to taste. Finish
with fresh ground pepper.
