Italian Gluten Free Tiramisu

Italian Gluten Free Tiramisu was learned during a recent trip Pegs took to Lake Como!  

What a love feast we had during our wonderful cooking class in Minaggio, Italy taught by Eva, owner of Cuciniamo Italiano. We had a ball, and I learned new ways of cooking several Italian dishes! 

Today’s recipe makes my heart sing! There are certain dishes, we would love to have taste authentic, and Tiramisu is one of them! What a blessing it was to learn how to make this decadent gluten free dessert and share it all with you!

Let’s talk Italian Gluten Free Tiramisu! Where does one find gluten free Ladyfinger cookies?  We used Shar Savoiardi’salso knows as Ladyfingers, a light and airy Italian cookie for the win, taste and texture! They are a bit bigger than normal sized lady fingers, but worked great. Just make sure the serving dish you are using will fit them or break them to fit the dish you will serve it in.

A Perfect Dessert!

    Ingredients

    Units Scale
    • 5 eggs, separated
    • 1 cup or 200g. Organic Sugar
    • 28 oz. containers Mascarpone cheese (I bought mine from the Italian stand at the MB Farmers Market- @FreshPasta)
    • 1/21/3 cup espresso coffee
    • 1/4 cup cream
    • 1 package gluten free Ladyfinger Italian cookies

    Instructions

    Equipment:

    1. Square dish to dip biscuits into the coffee.
    2. Serving dish: 9 x 11 glass or ceramic oval or rectangle dish
    3. Whisk or hand blender
    4. Spatula
    5. 2 medium bowls

    Method for True Italian Glute Free Tiramisu:

    1. Separate eggs into 2- medium bowls, Whites in one bowl, egg yolks in the other
    2. Add sugar to egg yolks, whisk until blended. Set aside.
    3. Whisk egg whites until stiff peaks form.
    4. Whisk both containers of mascarpone cheese into egg yolk sugar mixture.
    5. For the filling: Fold egg whites into egg yolk cheese mixture. Gently Fold while blending, not stirring. 
    6. In a medium square dish, pour in fresh espresso or strong coffee and add some cream. You’ll dip the Ladyfingers in this.
    7. Get your serving dish ready and spread 1/2 the filling into the bottom of serving dish.
    8. Dip cookies into the coffee & cream and place over the filling. If needed, break to fit the cookies into smaller pieces to fit into your dish. Try to cover all the filling with coffee dipped cookies.
    9. Top biscuits with remaining filling. Smooth top with a spatula.
    10. Sift cocoa powder over the top of filling. I like a lot of cocoa dusting
    11. Refrigerate for at least 1- hour or longer covered.

    Notes

    Variations:

    1. Use coconut milk or another milk alternative for a Dairy free version in the coffee.
    2. For mascarpone cheese use Kite Hills whipped ricotta
    3. Want to bake your own Lady fingers? Try this homemade version!
    4. Add some rum or a flavored liqueur of choice to the coffee cream. Frangelico, Bailey’s Irish cream or Kahlua.
