Curry Family Meatloaf
1 1/2-2 pounds ground Chicken
1/4 pound or 2 Mild Italian chicken sausages uncooked (optional)
Optional meat choices* see below
1/2 Onion finely minced or pureed
2-3 Garlic Cloves minced (depending on how large the cloves, the more the better)
1/2 C Bread Crumbs gluten free
1/4 C Parmesan Cheese
1 Egg
2 TBL Brown Sugar
1/4-1/2 C Ketchup
2 tsp. Italian seasoning (IF YOU HAVE 6 Seasonings USE that instead)
1/4 tsp. Pepper
Ketchup or a GF BBQ Sauce for topping (We LOVE Organicville’s Tangy BBQ Sauce)
Method:
In a large bowl mix all ingredients thoroughly with hands.
Place in loaf pan either glass or ceramic.
Brush top of meatloaf with BBQ sauce or Ketchup.
Bake 1 hour to 1 ½ hours @ 350 OR 2 hours @ 300.
VARIATION: Here’s another meat combination that is delicious too!
Use 1 1/4 pound ground chicken with 1/2 Lb. Ground Grass Fed Beef, and 1/4 lb ground pork.
Serve with green beans, garlic mashed potatoes and applesauce. Killer!
