Sautéed Okra Collards and Carrots

Ingredients

12 okra, washed and patted dry (choose small to medium ones) DO NOT STEM

1 bunch collards, or other greens, (remove stems) and sliver into thin strands

2 medium carrots thinly sliced~ or a bunch of baby carrots (scrub clean with a veggie brush, no need to peel)

2 garlic cloves slivered or diced

12 Tbl Olive oil or ghee

Your favorite sea salt (This dish is perfect to add a flavored sea salt! Try a lemon flavored or basil sea salt)

Instructions

In a large skillet, (you want the space for browning), heat on medium, add ghee or olive oil.

Add okra, and let brown. Next add carrots and let brown. Last add slivered collard greens and garlic. Let collards wilt and garlic get a little brown. Feel free if you have more time to cook each vegetable individually~ ALL in the SAME pan, W/O washing the pan, and then in the end mix them all together before serving.

Just before serving drizzle with olive oil and season with sea salt. TA~DA!

What we LOVE about this recipe is #1The okra when sauteed this way wont get slimy! #2 it gets people to actually try okra and discover it’s pretty darn good! Especially when all brown and yummy! Another great veggie delicious eaten with your fingers!

Serves 4-6 depending on the veggie eaters!
