    • 1 1/2 cup raw cashews
    • 1/4 cup light agave
    • 1/3 cup coconut oil
    • 1/2 lemon juice



    1. Soak raw cashews in water for 4 hours.
    2. When ready, put cashews, agave, coconut oil, and lemon juice into Vitamix. Blend on high for 2-3 minutes until creamy and creates 4 “pillow-y sections” in blender.
    3. Place in fridge for up to a week~ that is of course you can resist eating it all!!!

    Note: we are not huge fans of agave; however, in this recipe when you use honey doesn’t produce the same consistency.


    1. Add green onions, minced garlic, pesto, fresh or dried Italian herbs such as basil, oregano, thyme, even add mint just for fun! So many uses and ideas for this wonderful creamy cheesy like custard alternative to dairy!
    2. Add instead of ricotta in lasagne or top on your bagel… just as a start to your creativity!
