A Dessert That Feels Special (Without the Stress)

What I love about this tart is that it doesn’t require complicated steps or hard-to-find ingredients. It’s one of those recipes you can make ahead, pull out when guests arrive, and instantly elevate the table.

The crust is made from simple almond-based cookies, giving it a slightly nutty, buttery flavor (without needing traditional flour). The strawberries are the star — fresh, vibrant, and lightly glazed for that beautiful finish.

    Ingredients

    Units Scale
    • 23 boxes of organic Strawberries, rinsed
    • 11/2 Cookie Crust ingredients: 2 boxes Simple Mills Pecan cookies + butter
    • 1/2 cup strawberry glaze recipe or fresh organic strawberry jam, homemade or store bought

    Instructions

    1. Preheat oven to 350-degrees.
    2. Wash and core strawberries, dry thoroughly, then, cut strawberries in half
    3. Prepare cookie crust for a 9” tart pan (if tart pan is bigger than 9”, you might want to 1 and half the recipe
    4.  2 C Finely ground Gluten Free Simple Mills Almond pecan cookies
    5.  5 Tbsp. Melted unsalted butter or alternative dairy free butter
    6. Crush cookies in food processor until finely ground into a “cookie” flour
    7. To make crust – mix both ingredients together in bowl. Stir until blended.
    8. Pour the cookie butter mixture into the tart pan.
    9. With your hands, press crust evenly into tart pan and up the sides.
    10. Place tart crust into the oven for 10-12 min. until lightly browned. Let cool
    11. Make a strawberry glaze or melt organic strawberry jam just until melted to make it
      easy to brush glaze over the strawberries.
    12. Once tart crust is cooled, place a layer of the glaze or jam onto the top of the crust.
    13. Start placing halved strawberries cut side down until crust is topped with strawberries.
    14. Use the glaze to brush over the fresh strawberries.
    15. Store in fridge until ready to eat.
    16. Serve with fresh whipping cream or ice cream

    Notes

    Variation: Use any berries: blueberries, raspberries, even stone fruit pitted and sliced!

    Serving & Variations

    This tart is lovely on its own, but you can also serve it with a dollop of fresh whipped cream or a scoop of your favorite ice cream.

    • blackberries
