Sautéed Shiitakes Green Beans and Tomatoes

Serves 2-4

Ingredients:

1 lb. or more green beans washed and end tips removed

5-6 shiitake mushrooms, sliced

½ onion, sliced (red or white onion works)

2 cloves garlic, mined

½ – 1 cup cherry tomatoes, halved

Celtic Sea Salt to taste

1-3 tablespoons Olive oil

Fresh cracked pepper

Red chili pepper flakes (optional)

BEANS!

Method:

– Heat skillet to medium heat. Add olive oil, onions and mushrooms. Cover and cook until soft for 2 minutes or more.

– Stir onions and mushrooms and then add the green beans on top. Cover and cook to let the beans steam for about 5 minutes, checking half way through flipping the vegetables.

– Using a metal spatula, turn and mix the green beans, onions and mushrooms.

– Add minced garlic and halved cherry tomatoes, and gently mixed through.

– Lower heat and cook for a final 5 minutes until tomatoes get saucy.

– Remove from pan and serve.

– Season with salt and fresh ground pepper to taste.

Options: To make this dish a one pot meal, add sausages.
