Ingredients

  • 1 small cauliflower, cut into small pieces
  • 2 medium potatoes, garnet yams, or butternut squash, cut into small pieces
  • 3 Tbsp. ghee
  • 1/2 tsp. mustard seeds
  • 1 Tbsp. minced shallot
  • 1 tsp. turmeric
  • 1 tsp. sea salt
  • 1 1/2 TBL. coriander powder
  • 1/4 tsp. cinnamon
  • 1/2 tsp. Curry
  • 1 TBL. Brown rice syrup

Instructions

  1. Heat oil or ghee until hot.
  2. Add mustard seed until they pop and sizzle.
  3. Add turmeric and potatoes or butternut squash or yams. Stir well and cover for 7-8 minutes over medium heat. Stir every now and then.
  4. Add cauliflower, salt, and cover and cook for 4-5 more minutes.
  5. Add rest of ingredients and cook through.
  6. Also nice is to add fresh English peas or frozen peas in the last 5 minutes!
  7. Serve hot over lemon or yellow turmeric rice.
