Ingredients
- 1 small cauliflower, cut into small pieces
- 2 medium potatoes, garnet yams, or butternut squash, cut into small pieces
- 3 Tbsp. ghee
- 1/2 tsp. mustard seeds
- 1 Tbsp. minced shallot
- 1 tsp. turmeric
- 1 tsp. sea salt
- 1 1/2 TBL. coriander powder
- 1/4 tsp. cinnamon
- 1/2 tsp. Curry
- 1 TBL. Brown rice syrup
Instructions
- Heat oil or ghee until hot.
- Add mustard seed until they pop and sizzle.
- Add turmeric and potatoes or butternut squash or yams. Stir well and cover for 7-8 minutes over medium heat. Stir every now and then.
- Add cauliflower, salt, and cover and cook for 4-5 more minutes.
- Add rest of ingredients and cook through.
- Also nice is to add fresh English peas or frozen peas in the last 5 minutes!
- Serve hot over lemon or yellow turmeric rice.
