Gluten Free Waffles
1 1/2 C total dry ingredients
1 C Pancake mix OR Pamela’s GF Pancake and Baking Mix
¼ C. Fresh ground flax seeds
¼ C coconut flour
2C total liquid ingredients
2 eggs
1 C hazelnut or hemp seed milk.
1 Cup Arrowhead sparkling berry mineral water
1 heaping Tbl. Honey
2 TBL Maple syrup
1 tsp organic vanilla extract
Coconut Oil spray for waffle iron or melted coconut oil and brush
Ingredients
In a mixing bowl combine all wet ingredients
Add all dry ingredients to wet.
Using a large whisk, mix well.
Add your fresh or frozen berries, diced fruit or chocolate chips, nuts, or chopped dates or date paste.
Heat waffle iron. Once hot brush or spray coconut oil onto grates.
Pour 1/2 C batter into waffle maker.
Once done, dot with butter, top with fruit and drizzle maple syrup, honey, fresh fruit or fresh fruit jam.
Variations:
Lemon Pancakes: add 1 tsp Lemon flavoring & zest of 1 lemon Peg’s always adds lemon!
Date Waffles: Add 2 heaping tablespoons of date paste to the batter.
1/4 Cup GF chocolate chips, pecans, or walnuts, etc.
1/4 Cup applesauce (optional)
1/2 mashed ripe banana (optional)
1/2 Cup fresh or frozen organic fruit i.e. Blueberries…(optional)
