Ingredients
- 2–3 cups Gluten Free Pasta: Our favorites are: Brown Rice: Jovial, Tinkyada, OR Grain Free:Explore Asia Black Bean Pasta OR
1-2 c medicinal mushrooms
Use 1 type or a blend: shiitake, King oysters, pink, or yellow oysters, Maitaki, enoki or chanterelles.1-2 shallots or 2-3 garlic cloves, minced
2 C seasonal veggie chopped:used purple cauliflower and leaves, heirloom zucchini, chopped
1/4 cup olive oil + 2 Tbsp.
1-2 Tbsp butter
1/2 tsp Celtic sea salt
1/4 C Pecorino Romano, grated
Variation: OMIT cheese if on our Cleansing with Food Program and use Nutritional Yeast for a dairy free option. Clean Pesto is dairy free.
Instructions
- Sauté mushrooms in olive oil covered turning to brown on all sides.
- Once soft, add chopped veggies and garlic and or shallots
- Cover for 3-4 minutes until fork tender.
- Add butter sauté.
- Add cooked pasta and pesto. Toss.
- Serve with pecorino garnish
- Serve with our House salad or Caesar salad and garlic bread.
