Quinoa Apples and Onion Porridge

Ingredients:
1/2 C rinsed quinoa
1 1/4 C coconut milk
1/2 tsp or more cinnamon
Celtic sea salt
Honey (optional)
1 Apple~thinly sliced skin left on
1 small sweet or brown onion~ thinly sliced
2 Tbl. coconut oil
1 Tbl butter (optional)
Method:
Bring coconut milk almost a boil (tiny bubbles around edges happen).
Add quinoa, salt and cinnamon.
Bring back to a slight boil, then simmer for 10 minutes covered.
Turn off and set aside. NO peeking! Keep lid on as it will continue to cook.
While quinoa is cooking, in a medium skillet on medium heat, add coconut oil.
Add apples and onions. Cover for about 3 minutes until they being to soften and wilt.
Once wilted remove lid and let caramelize, turning every so often, but not too often to break the apples. Let them brown all on their own…If you’d like add 1 TBL butter, as this really makes for a yummy caramelized dish!
When quinoa is done, add the apples and onions (completely optional, drizzle honey). The caramelized apples and onions add their own sweetness! Enjoy!
