She had a beautiful make your own salad spread for us to choose our own toppings! It was fabulous! The star however was the dressing she created! It was an OMG experience where all I wanted was to continue eating more salad! I seriously laughed at myself as I licked my bowl clean!
We made her dressing for a recent holiday family gathering and everyone was equally wowed by its delicious flavor! With just the right amount of sweet from the white balsamic vinegar, to the tang of the shallots and the creaminess from the mayo, I knew our Curry Girl had created a winning dressing!
Annie’s Addictive Salad Dressing can be used for so much more! Yes to top your favorite garden salads, in addition to a Greek salad which it will pair heavenly with the olives and sheep feta! Same for our Roasted Beet Salad or its actually tasty on our Taco Salad as well! And don’t stop at just salads, as it thickens once it’s cold from the fridge making it yummy drizzled over grilled or roasted vegetables, especially asparagus, broccoli or baby potatoes. And for a yummy topping in a wrap sandwich!

Annie’s Addictive Creamy Shallot Salad Dressing
- Yield: Makes 1+ 1/4 cup 1x
Ingredients
- 1–2 shallots, diced (about 1/3 cup)
- 1/2–1 Tbsp. Avocado Mayo
- 1 C. Olive oil (cold pressed, extra virgin, organic)
- 1 C. white Balsamic vinegar ( if using a thinner white balsamic, use 3/4th and add a Tbsp of honey)
- 1/2–1 tsp. Celtic Sea Salt
- Fresh ground pepper to taste
Instructions
- Add all ingredients into the blender until thoroughly blended.
- Store in refrigerator for 1 month.

NOTE: If using a thinner white balsamic vinegar, use 3/4th vinegar and add a Tbsp. of honey

A: Up to one week in a sealed glass jar or container. Shake before using!
