Gluten Free Maple Donuts

Did you have to give up gluten…but you’re still craving donuts? Us too. 😉

That’s why we created this amazing gluten-free bake maple donut recipe!  Finding a good gluten free donut recipe can be a challenge…in fact, the first few times we gave this recipe a try, we failed miserably! But finally, we think we have it just right…maple donuts with a (also gluten free) banana glaze!

Gluten Free Maple Donuts

Ingredients

Donuts

  • 1/2 cups Pamela’s Baking & Pancake mix
  • 1/4 cup coconut flour
  • 1/4 tsp nutmeg (fresh ground (optional))
  • 4 tbsp melted coconut butter (oil, or butter)
  • 1/4 cup brown sugar
  • 1/4 cup coconut sugar
  • 3/4 cup buttermilk
  • 1 egg
  • 1 tsp vanilla
  • 12 tsp maple extract

Banana Glaze: (As shown in video)

½ ripened bananas, mashed
4 tbsp unsalted butter, melted
2 cups powder sugar
1 tsp salt
1 tsp vanilla
1-2 tbsp milk (if needed)

Maple Glaze
½ C 100% Maple syrup
4 Tbl. unsalted butter, melted or coconut oil, or Melt (alternative butter)
2 C powdered sugar
Pinch of sea salt
1 tsp. organic vanilla extract
1-2 Tbl. hemp or almond milk

Instructions

Donuts

  • Preheat oven to 400°
  • Whisk together the dry ingredients
  • Melt butter and add brown sugar.
  • Beat butter and sugar until creamy.
  • Add vanilla, buttermilk, maple extract, and egg; beat well.
  • Slowly add dry ingredients to wet ingredients and combine until all ingredients are well incorporated.  and set mixer on stir setting or lowest speed.
  • Fill individual donuts in lightly greased donut tin cups 2/3 full.
  • Bake 6 to 8 minutes until donuts spring back when gently touched.
  • Cool donuts on a cooling rack.
  • To make donut holes, roll donuts in the palm of hand the size of a golf ball.
  • Bake on a parchment lined cookie sheet. Let cool.
  • Glaze or dust donuts or donuts holes when completely cooled. Except when choosing cinnamon sugar, roll or dust when the donut is warm.

Glaze

In a small pot, melt butter and syrup. Set aside until cooled. Whisk in remaining ingredients until smooth. Dip or brush glaze onto donuts. Let cool.

Simple Glaze:

2 C powdered sugar

1/2 tsp. vanilla

1/4 C water

Whisk all ingredients together until smooth.

Dip hot donut into glaze. Glaze will harden as it cools or cooling rack.

Additional option: Add 1/2 C melted chocolate chips to simple glaze for a chocolaty glaze yummyness!

Notes

Dust cooled donuts with sifted powdered sugar or sprinkle or roll hot donuts in cinnamon sugar
