I’ve always preferred chicken over turkey and lamb over cow. I find it helpful to eat it, but not make it my main star of my meal. The vegetables take front row center on our plates!

Quick and Easy Herbed Chicken
Pegs Herbed Chicken takes under 10 minutes to cook? That’s it! It’s moist, tender and so versatile, you’ll use it whole as a main dish or cut it up and add it into wraps, sandwiches or salads.
- Total Time: 15 minutes
Ingredients
- 2 packages boneless skinless chicken thighs (about 5 pieces per package, or 6 thighs)
- Garlic Granules (be generous with your shakes)
- Herbes de Provence or Italian Herb blend (be generous with your shakes)
- Celtic Sea Salt (be generous with your shakes, unless on a low salt diet)
- 2–3 Tbsp. Olive oil
Instructions
- Wash and pat dry chicken
- Season the chicken with all ingredients except the oil
- Heat skillet on medium high heat with olive oil
- Once hot, place chicken seasoned side down.
- Repeat the seasonings on the up side of chicken.
- Chicken should sizzle once it hits the pan. Allow it to sear on medium low.
- Cover and time 4 minutes, until thighs are browned, (if not skinless, skin will get crispy)
- Flip the chicken over, cover and time for 2 minutes.
- Once timer is done, do NOT lift the lid. Remove from heat onto another burner and let sit for 5-7 minutes. The steam and heat from the pan continue to cook the chicken.
- This is how you will sear in the flavor and juices.
Notes
Serving suggestions:
- Serve Herb Chicken thighs whole with a vegetable, seared and salad.
- Spoon juices over the chicken when serving.
- When storing leftovers, pour the juices over the leftover chicken. Store in the refrigerator.
