Avocado Toast with an Egg

Avocado toast is great for a nutritious breakfast, satisfying snack or speedy lunch. It’s become uber trendy and we are happy about that. Avocado is great for our brain! Enjoy as is for its simple delicious flavor, or add one of the many yummy toppings we’ve shared below.  

 

    Ingredients

    Ingredients:
    12 pieces of bread, toasted
    1/2 avocado
    1 egg, optional
    1 Tbl coconut oil, ghee, or butter
    Celtic sea salt, truffle salt, or your favorite flavored salt
    Fresh ground pepper

    Optional toppings: red onion, sliced tomato, olives, sheep feta, almond cheese, smoked Gouda, green onions, sauteed mushrooms, salsa, hempseeds, pumpkin or sunflower seeds, sardines, tuna, salmon, smoked trout, ham, sausage or bacon. Greens: spinach, arugula, kale, chard, sprouts, basil leaves or chopped fresh chili peppers.

    Method:

    In a toaster, or skillet, camper style, toast your bread. Set  toast onto a plate. Open an avocado. Using a fork mash half onto your toast. Salt and pepper to taste.

    Notes

    Notes:

    • If adding greens, take a handful and just when you go to flip the egg, add the greens to the pan and then flip the egg on top of the greens. This will wilt your greens perfectly!  Turn off the heat and let egg sit for a minute.
    • Avocado toast on the go: wrap your sandwich in a parchment or paper towel, and then wrap that inside of a piece of tinfoil. This wrapping will keep your sandwich warm.

    Egg-less Variation (pictured):  toasted bread, thin layer of Melt “butter”, 1/4 avocado, Kite Hill almond “cheese”, thinly sliced shallots, radish sprouts, pinch of salt, fresh ground pepper, seaweed Dulse seasoning and paprika.
