Earthbound Farm

One of our favorite things they do: if you open the packaging you can see they’ve printed farmer stories — this is like meeting your farmers at local farmers markets!
Smoothies are just one way to sneak more greens into your diet. And we aren’t talking about just spinach and kale. We used Spring Mix greens in this smoothie to show you how tasty ALL greens can be!
Super healthy Spinach and Kale are great sources of antioxidants and essential nutrients, but so are all the other varieties of greens. A rule of thumb is that dark leafy greens are higher in antioxidants and nutrients. However, making sure you get a variety of colorful foods ensures you get a rich source of all nutrients and minerals. For example, even a lighter green leafy vegetable like Romaine contains a good source of Vitamins A & C, which help fight free radical damage to our cells.
Adding vegetables into smoothies is another great way to load the nutrients in. We have been using cauliflower, zucchini, butternut squash, and other veggies for years now. These vegetables add a thick creamy texture to smoothies. In fact, they are great to add in if you have leftovers, for example leftover sweet potato, to create less food waste.

Chocolate Zucchini and Spring Mix Smoothie
We hope you enjoy this nostalgic Chocolate Zucchini and Spring Mix Smoothie recipe. It tastes like liquid chocolate zucchini bread + loaded with even more nutrients/greens!
- Total Time: 5 minutes
Ingredients
8 oz. Almond milk
2–4 oz. water (depending on desired consistency)
1 Banana, fresh or frozen
1 cup of Earthbound Farm Spring Mix
1/2 cup zucchini, steamed and then frozen
2 TBSP cacao powder
2 Medjool dates, pitted
1–2 TBSP almond butter
1 serving vanilla protein powder (your preference)
1 tsp vanilla extract
Pinch of Celtic sea salt
Handful of ice
*Optional toppings: fresh grated zucchini and cacao nibs
Instructions
Blend on high for 1-2 minutes until nice and creamy. Add more water if desired. Top with optional toppings
Notes
- After 2-3 days, put fresh greens in freezer safe bag and store in freezer before they wilt or turn.
- Switch up for your greens in your smoothie to get difference nutrients. Romaine, baby gems, spring mix, power greens, arugula (can be spicy or nutty flavor), along with the go-to kale and spinach.
- If using zucchini or cauliflower, steam first and then freeze before adding in. Cooking the vegetables before adding into smoothie will help if you experience bloating & help ease of digestion.
