Grace and I made a similar fish taco recipe thousands of people have loved! Here is a version of her wild Fish Taco recipe everyone will enjoy! The fish is first marinated with olive oil lime and cumin, keeping it moist with a very fresh taste. I so loved watching her and her husband cook this dish while camping! Oh the joy to see a married couple love to cook together! Her twist is using a grain-free almond flour tortilla she makes it into crispy taco shells! You will love this recipe!

Our crispy fish tacos feature tender, flaky white fish coated in a crunchy, gluten-free crust that fries up to golden perfection. The secret to getting that crispiness without the gluten lies in using a mix of gluten-free flours, like rice flour or chickpea flour, and seasoning it with a blend of spices that add just the right amount of heat and flavor. And don’t forget the tangy slaw! A vibrant mix of cabbage, cilantro, and a zesty lime dressing adds a refreshing contrast to the rich, crispy fish.

Grace’s Wild Cod Fish Tacos (Gluten Free, Grain-Free and Dairy Free)

    Ingredients

    Units Scale

    Fish Filling

    • 2 pieces, 1 lb. Wild caught Cod or Mahi
    • 2 Tbsp. avocado or olive oil
    • 1 Tbsp. fresh cilantro, chopped
    • Juice of a lime, about 1/4 cup
    • 1/2 tsp. ground cumin
    • Flake salt, a pinch

    Grace’s Tasty Fresh Pico de Gallo

    • 1 can organic diced tomatoes
    • 1 tablespoon lemon juice
    • 1/2 to 1 whole jalapeno pepper or use 1/4 cup 505 Green Chile Peppers
    • A large hand full of cilantro
    • 1 teaspoon sea salt (Celtic, Real Salt, or Kosher Sea Salt)

    Taco Shells

    • Use almond or cassava tortillas by Siete

    Instructions

     

    1. Mix cilantro, lime juice, cumin and flake salt together.  Pour marinade over fish and let set while preparing the tacos.

    Simple Cabbage Slaw:

    1. Add 1 cup shredded green or purple (or a combo) cabbage into a bowl.
    2. Pour lime juice over the top and salt to taste.
    3. Add fresh minced cilantro to taste.

    Crispy Taco Shells

    1. Add 2 Tbsp. avocado oil in to a pre-heated skillet
    2. Place tortillas one at a time into oil, flip as they start to brown.
    3. Once they brown, use 2 forks and start shaping tortilla into taco shells.
    4. Fold one side over keeping the top side raised as you brown
    5. Flip over and do the same o the other side.
    6. Set taco shell aside. Put a crumpled piece of paper towel or tin foil in between shell to keep the taco shells shape and keep it from collapsing as it cools. This method helps shell to hold its shape.

    Grace’s Tasty Fresh Pico de Gallo

    1. Put all ingredients into a food processor and pulse until its chunky like salsa

    Putting your Tacos Together

    1. Take 1 crispy taco shell and add some fish into the shell
    2. Add cabbage slaw, salsa and avocados or guacamole

    The short answer is NO. I learned the hard way. At our first daughter’s wedding we had the sad unfortunate experience when our taco vendor served up a blended wheat and corn tortilla taco to our guests and our family who were gluten free. We had even made sure prior to our event, we were going to have gluten free corn tortillas served. The assured me. Unfortunate as it was, it was a lesson even for me, to double check before the head chefs left  our party! It was my worst nightmare! Please always double check that your corn tortillas are gluten free, or any tortillas you’ll eat in a restaurant or store bought. Reading our labels is the best protection we have.
