Mexican Burrito Bowl
Making Tuesday Taco Night a little Zen.
An easy to prepare meal for lunch or dinner. Simple fresh and tasty ingredients.
Ingredients:
Yellow Rice (recipe Here)
Black beans, rinsed (other bean options: pinto, black-eyed peas, black soy, white beans)
Cherry tomatoes, halved
Avocado, sliced for topping
Red onions, thinly sliced
Fresh Cilantro, minced
Cotija or almond “feta cheese”, crumbled
Favorite hot sauce, enchilada sauce and or fresh tomatillo salsa or summer salsa
Additional options: shredded roasted chicken, pork or beef, grilled shrimp, fish, or

Method:
Ready all ingredients for preparing each bowl. For the yellow rice, follow recipe instructions in link.
Once all your ingredients are readied, assemble into your bowls. Drizzle hot sauce and/or salsa over ingredients and serve with fresh minced cilantro, sliced red onions, and crumbled cheese as garnish.
